Polenta is a corn meal mash.  It is a staple of Northern Italy as pasta is to the south.  Originally a dish for the poor, polenta has become a trendy dish.  It is also a very versatile dish.
 

Polenta recipe:
  • 250 ml chicken stock
  • 1/3 cup corn meal
  • 2 heaping tsp. Creative Affair
  • 1 tbs. olive oil
  • salt and pepper to taste
  1. bring stock to boil over high heat
  2. add salt and pepper
  3. slow add corn meal and constantly stir
  4. lower heat to low-medium
  5. cook until thick and smooth constantly stirring
  6. add oil and stir in
  7. take off heat and let stand 10-15 minutes
