Tzatziki:
- 1 cup plain yogurt
- 2 tsp. Creative Affair
- 1 small cucumber
- salt

*Peel, seed and gate cucumber with cheese grater, large holes

You may skip this step, the Tzatziki will be a little runnier. If it seems too runny just add a little more yogurt. Sprinkle some salt on the grated cucumber and put it aside to let it release water 15-20mins should be enough.

add all the ingredients to the yogurt and stir

let stand in the refrigerator for 1/2 hour to 1 hour and stir again before serving for best results. It should keep in the refrigerator for several days
* Peeling, Seeding and Grating:
To peel a cucumber I find that a potato peeler work well. Cutting off the ends of the cucumber give you a starting point for the peeler. Once you have peeled it, cut the cucumber in half, length wise. To seed it, simply use a spoon to spoon out the seeds, I find that run the spoon the length of the cucumber work very well. Once you have complete these steps you should have two "U" shaped halves. Run them one at a time over the large holes of a cheese grater and you're done. By sprinkling some salt on the grated cucumber the water will leach out faster. The more water you release the thicker the Tzatziki.
Note: Serve the same way you would serve regular Tzatziki, as a dip for vegetables, on pitas, with lamb, chicken or pork. It makes a great salad dressing when added to a vinaigrette.
