Always remember that these recipes are only guidelines, feel free to experiment and substitute. Creative Carbonara

 

  1. Whisk eggs with ½ of the grated cheese, set aside.
  2. brown bacon and drain excess fat
  3. Heat oil over medium heat and add Creative Affair and browned bacon set aside.
  4. Cook pasta al dente as per direction on pasta package.
  5. Drain most of the water, save 1/4 cup, set aside
  6. Return pasta to cooking pot, add Creative oil mixture.
  7. Return pot to medium-high heat and toss pasta to coat with Creative Oil.
  8. If pasta gets dry add small amounts of reserved water a tbs. at a time, don’t make pasta watery.
  9. Pour egg wash over pasta and toss to coat
  10. Continue to toss pasta until egg is cooked, approx. 2-3 min.

Serve with fresh ground pepper, and/or hot chili flakes.  A little dusting the nutmeg with also gives it a pleasure taste.  A light drizzle of extra virgin Olive oil never hurts.
