The name ricotta comes from the Latin word for, "re-cook", which is how it is made.  They believe that it originated in the area around Rome in ancient times. 
 
Ricotta has a fresh light taste and it perfect with pasta.  Creative Affair is the perfect way to add a savory flavour to this wonderful cheese,
 
 

This recipe for ricotta stuffing can be use for Lasagna, Pasta Shells, Cannelloni, Ravioli, Tortellini, Manicotti and any other stuffed Pasta.


Ricotta Stuffing:

  • 1 lb/500g of ricotta

  • 1 egg

  • 2 tsp. Creative Affair

  • 2 tbs. Olive oil

  • salt to taste

Mix ingredients together don't make it too creamy, try to retain some of the ricotta's texture.

Try adding grated Parmesan or Romano cheese to the mixture.  If you do decide to add these cheeses make sure you add them before you add the salt so as not to make the mixture salty!
