Pasta Carbonara is speculated to be a dish which dated back to ancient Rome.  The name Carbonara means, charcoal and it is believed that is was a dish prepared for coal miners.

Pasta Carbonara:

  • 400- 500 g of your favourite pasta

  • 3 eggs

  • 2 tsp. Creative Affair

  • 4 tbs. Olive oil

  • ¼ cup of grated cheese, parmesan of Romano

  • 2-3 slices or Bacon or Panchetta chopped into bits

 

  1. Whisk eggs with ½ of the grated cheese, set aside.

  2. brown bacon and drain excess fat

  3. Heat oil over medium heat and add Creative Affair and browned bacon set aside.

  4. Cook pasta al dente as per direction on pasta package.

  5. Drain most of the water, save 1/4 cup, set aside

  6. Return pasta to cooking pot, add Creative oil mixture.

  7. Return pot to medium-high heat and toss pasta to coat with Creative Oil.

  8. If pasta gets dry add small amounts of reserved water a tbs. at a time, don’t make pasta watery.

  9. Pour egg wash over pasta and toss to coat

  10. Continue to toss pasta until egg is cooked, approx. 2-3 min.

Serve Pasta Carbonara with fresh ground pepper, and/or hot chili flakes.  A little dusting the nutmeg with also give it a pleasure taste.  A light drizzle of extra virgin Olive oil never hurts.
