Balsamic Chicken leg roast:                                                                Print friendly

  • 6-8 Chicken leg or leg thigh

  • 1/2 water

  • 1/2 cup balsamic heat

  • salt to taste

  1. trim excessive fat and skin off chicken

  2. rub salt into chicken pieces

  3. cover chicken with Balsamic heat and let marinade in refrigerator for 2-3 hours, over night is best

Oven:  pre-heat oven to 400°F

  1. take chicken out of refrigerator for at least 1 hour prior to cooking

  2. place chicken in a deep stainless steel baking tray or earthware with marinade

  3. cook legs cover for 30-40 minutes, uncover, baste and cook additional 20 minutes

  4. cook leg thigh 45 minutes covered and 35 minutes uncovered

  5. cook to internal temperature of at least 160°F

Note: * every oven varies in temperature before removing from the oven to service cut into one chicken leg to the bone.
